我老公是雞翅膀的超級愛好者,一個人吃掉10-15個雞翅輕輕松松,但是外面賣的雞翅太貴了,一對最便宜也要7-8塊,根本不敢放開了吃。為了滿足他對雞翅的愛,再加上我們這邊超市正好翅中做活動,必須買買買讓他吃個夠。
外面的店為了省事都是做的奧爾良味道的,我們今天做點不一樣的。都說食在廣東,廣東的各種醬料味道也是非常棒的,我特別喜歡沙茶醬,那今天就做一個沙茶雞翅!
用料
雞翅中
6-12個
姜粉
1勺
花椒粉
0.5勺
料酒
3-5湯匙
蠔油
1勺
沙茶醬
2勺
紫金椒醬
1-2勺
醬油
2勺
空氣炸鍋烤沙茶雞翅的做法
- 準備好雞翅中,超市買的雞翅中最好泡1-2個小時,把里面的血水泡出去,這樣做出來的雞翅不會有腥味。把雞翅的兩面劃幾刀方便入味。一般大一些的空氣炸鍋一鍋可以烤6-8個。
- 撒上姜粉,如果沒有姜粉用切碎的生姜末也可以。
- 再放入一點花椒粉,根據雞翅的量7-8個放小半勺就行。
- 倒入3-4湯匙料酒,如果沒有料酒用黃酒或者是二鍋頭也可以,二鍋頭的話2湯匙就夠了。
- 耗油來一湯匙。
- 沙茶醬來2湯匙,沙茶醬是有點點微甜的味道。
- 紫金椒醬來1-2湯匙,紫金椒醬是用大蒜和尖椒做的,有淡淡的蒜香和辣味,喜歡吃辣可以放2勺。
- 黃豆醬油放2湯匙,增加雞翅的顏色。帶上一次性手套把雞翅抓拌均勻,讓醬料沾到每一個雞翅里面。用保鮮膜蓋住小盆放到冰箱里面2-3個小時,讓雞翅中入味。不著急吃的可以頭一天晚上腌制好 第二天烤制。

- 10-15分鐘后把溫度調到180-200度,烤5-10分鐘,中間記得還是需要翻個面,讓兩面都能烤脆烤到金黃。
這個溫度是我家空氣炸鍋的溫度,如果你家空氣炸鍋的功率低,可以適當延長烤制時間。
- 這樣外表金黃香酥,內里汁水豐富的沙茶味烤翅中就做好了。配一杯小酒或者是氣泡水開始享用吧!
小貼士
1)腌制時間最少也要2-3個小時,不然無法入味。
2)這個菜譜我沒有另外放鹽,因為我們家的口味比較淡,如果平時口重可以適量放鹽。
3)各家的空氣炸鍋功率不太一樣,我的溫度和時間僅供參考,大家中間可以拿出來看看,熟了就可以了。
4)家里沒有紫金椒醬的可以換成其他的有點辣味的醬,家里有啥都可以試試,沒準就出來一個不一樣的味道。
