肉沫酸豆角的做法
- 豇豆去頭尾,洗凈。
依照儲存瓶大小將豇豆切段。
- 煮沸一鍋水。
- 下入豇豆焯燙10秒,至變成翠綠色。
- 撈出過涼水。
- 無油的保鮮盒中加入1勺鹽。
- 放入豇豆,填滿水,末過豇豆。
- 陰涼處存放三天。
開蓋,變成黃綠色。
- 豇豆撈出洗凈,切成小丁。
- 腿肉剁成餡。
- 熱鍋加入底油,加入花椒八角炸香。
- 加入蔥姜蒜和干辣椒爆香。
- 加入肉末炒至變色,淋入料酒。
- 加入酸豆角一同翻炒。
- 淋入生抽,老抽,翻炒均勻后加入少量水,燉5分鐘。
- 收干湯汁,調入適量鹽。
