不知道在哪兒看到說吃雞爪看劇爽歪歪。一直對雞爪念念不忘,趁著不上班,下午四點(diǎn)半就開始操作,半個多小時(shí)搞定。好吃到停不下來。真的,因?yàn)槲页粤苏槐P,我這幾個月都不太想吃雞爪。所以食友們要歹之有度。

雞爪

香葉
1片
八角
1個
生抽
3勺
蠔油
2勺
4瓣
醬油
3勺
料酒
2勺
冰糖
適量
4-5片
啤酒
1瓶(330ml)
花椒
20粒左右
桂皮

紅燒雞爪 好吃又簡單的做法
- 雞爪去掉指甲,剁成兩段,把上圖配料備好。
- 冷水下過焯雞爪,放入姜片和兩勺料酒(我說的勺喝湯的勺大小)。水開后2-3分鐘就行。撈出放入冷水中,最后瀝干水分。
- ?雞爪用廚房紙擦干(這一步不要省略哈!!!)也可以選擇長時(shí)間風(fēng)干,要不油花子到處亂竄。熱油放入八角、花椒和姜片,炒香后放入雞爪,翻炒5分鐘左右。

- 翻炒中加入3生抽、2-3勺老抽、兩勺耗油(都是小湯勺的量,基本不用放鹽)、香葉和蒜瓣(來不及剝皮也可以的)干辣椒放入姜片的時(shí)候忘記放了,反正都準(zhǔn)備了,扔進(jìn)去,翻炒均勻后,加入一瓶聽裝啤酒,啤酒不夠可以加點(diǎn)水,大火燒開(沒有啤酒的放1-2勺料酒,大料再放點(diǎn)少量的香葉桂皮去腥哈)
- 大火燒開后,加入冰糖,改小火煮。大概20分鐘,這一步到最后五分鐘要看著火,防止燒干。可以嘗嘗咸淡,根據(jù)需要決定是否放鹽)。還剩這么多汁的時(shí)候,大火收汁,加入點(diǎn)白醋是否更好,我加了沒嘗出來哈哈哈。
- 大火收汁后留點(diǎn)汁,關(guān)火盛出。找出要開的電視劇或者電影,開始邪惡的歹飯吧!
