藍莓爆漿葡式蛋撻的做法
- 牛奶140克、淡奶油120克、雞蛋黃4個、煉乳10克、細砂糖30克,稱入帶嘴的杯狀容器中,攪拌均勻,標準撻水就制作完成了。(淡奶油可以用80克牛奶+40克黃油代替,4個雞蛋黃可以用2個全蛋代替,煉乳可以用10克細砂糖代替。)
- 蛋撻皮無須解凍,依次擺放到鋪了油紙的烤盤上
- 每個蛋撻皮里放一顆洗干凈的藍莓(也可以用芒果、草莓、菠蘿、榴蓮等水果代替,巧克力和紅蜜豆也可以)

- 烤箱200度預熱上。給蛋撻皮依次倒入撻水,大約9分滿為宜。最后如果細砂糖沒有完全融化,可以把杯子中殘留的濕潤的細砂糖,依次倒入每個蛋撻的表面(這樣反而更容易形容表面的焦糖)
- 立刻送入烤箱中層,上下火200度烤20分鐘,最后幾分鐘守著烤箱,有漂亮的焦斑,就可以出爐,趁熱吃,藍莓一口爆漿,過癮
