- 排骨用淘米水浸泡片刻,去除血水。然后用清水洗凈,瀝干備用。
- 把生姜和大蒜去皮切成細末,撒在排骨上,再撒白胡椒粉、鹽、白砂糖、淀粉,倒生抽和蠔油,淋上油,把排骨抓捏均勻,腌制15分鐘左右。

- 等水開了,再把栗子撈起在冰水里冰一下。
- 冰火兩重天,栗子就能快速去殼去皮了。
- 把栗子一個個地擺在盤子里,然后再擺上腌制好的排骨,盡量都要平鋪,不要疊起來,這樣蒸的時候可以受熱均勻。擺上一點剁椒增色,也可以不擺。
- 鍋里燒水,水開后,把擺好的栗子排骨放入鍋里,加蓋大火蒸20分鐘左右,具體蒸的時候可以根據排骨的大小和數量來調整。蒸好后,在栗子排骨上撒些蔥花就能拍照品嘗了。
