我是個(gè)大閘蟹的狂熱愛(ài)好者 平時(shí)吃法都是直接清蒸,或者做成香辣蟹。有幾次看到別人去上海或蘇州探店,吃了傳說(shuō)中的蟹黃撈面滿(mǎn)滿(mǎn)的一大碗蟹黃倒進(jìn)面里!那叫一個(gè)饞啊,但是一碗價(jià)格要幾大百(??0?)?~ 干脆我就自己做吧!!
抓住大閘蟹季的尾巴,搞一碗超滿(mǎn)足的蟹黃撈面
(最后還附有禿黃油做法哦)
用料
大閘蟹(母蟹)
5只(10只也行啊)
料酒
1小勺
生抽
1小勺
適量
蠔油
1小勺
淀粉
1勺
耐心
很多
看上去很diǎo 實(shí)際不難的蟹黃撈面的做法
- 生猛捆好的大閘蟹,放鍋里蒸熟,大概蒸二十分鐘就熟了。(請(qǐng)勿水煮)
- 把蟹解綁,拿出祖?zhèn)鞑鹦饭ぞ?(沒(méi)有的話(huà),一把剪刀和一把叉子也行)
- 蒸熟了也看起來(lái)很生猛!連喵看了都孩怕
- 嗷嗷嗷~滿(mǎn)滿(mǎn)蟹黃拆蟹其實(shí)才是整個(gè)過(guò)程中最費(fèi)時(shí)間和精力的,很多人在這步已經(jīng)打起了最擅長(zhǎng)的樂(lè)器退堂鼓 把蟹腿先剪下來(lái)放一邊,蟹殼打開(kāi),去掉不能吃的部位:蟹腮,蟹胃,蟹心,蟹腸。(不懂的自己去度娘搜視頻看)
- 把蟹黃和蟹肉仔細(xì)地挑出來(lái),雖然挑了一個(gè)多小時(shí),但看到滿(mǎn)滿(mǎn)一碗還是很有成就感的(算了下次不想做了)
- 挑完了肉,鍋里下多點(diǎn)油,開(kāi)始煸炒剛才剩下的蟹殼和腿。(這樣可以讓油更香,嫌麻煩可以省略此步驟)
- 把蟹殼撈出,蟹肉和蟹黃倒進(jìn)去,開(kāi)小火翻炒一分鐘。調(diào)入料酒,鹽,生抽,蠔油。

- 再把淀粉用一小碗水混勻,變成水淀粉。倒入鍋里混合翻炒均勻(就是勾芡)。自己嘗嘗咸淡,淡了加鹽,咸了加水。沸騰個(gè)兩分鐘就可以出鍋了。
- 搞掂啦!金黃燦燦一大碗!省了幾百塊的成就感!
- 另外起鍋下點(diǎn)細(xì)面條撈出裝盤(pán),把做好的蟹黃粉倒上去!啊!大滿(mǎn)足(?′?`?)
- 配寬面也好吃
- 如果不喜歡蟹粉,也可以做成禿黃油(就全是蟹黃)在步驟7的時(shí)候只放蟹黃就行了,其他步驟一致。
