盡管身世復雜,頭頂各種光環,但是做法極為簡單,只需任意調味腌制,沾干粉后油炸,稍晾片刻趁熱灑孜然粉和辣椒粉即可,
搭配只需一種——啤酒!
用料
雞翅
隨意
蔥姜蒜
花椒、胡椒粉、辣椒粉、孜然粉
白糖、鹽、生抽
面粉
脆皮炸雞翅的做法
- 冰鮮雞翅洗凈,兩面各劃兩刀,按自己口味任意調味腌半小時,我用了蔥姜蒜、大量的花椒、適量鹽、生抽、胡椒粉和辣椒粉
- 鍋里倒入大量油,燒約七八成熱
- 去掉雞翅表面沾的調味料,保留汁水,蘸上比較厚的一層面粉,準備油炸
- 雞翅下鍋前輕抖一下,抖掉表面浮沾的面粉,逐個下鍋炸
- 大火下鍋,半分鐘后轉中火炸
- 油湯清亮,氣泡比較大并且稀疏的時候,就是快好了
- 炸至表面金黃,成熟時間需自己掌握
