毛血旺是一道川渝江湖菜,有葷有素,麻辣鮮香,非常好吃,在家做只需郫縣豆瓣和重慶火鍋底料,就能調(diào)配出地道的味道。
用料
鴨血、鱔魚、黃喉、毛肚、午餐肉
黃豆芽、黃瓜、青蒜
郫縣豆瓣

重慶火鍋底料
1/2包
干辣椒
花椒
醬油
米酒
毛血旺 麻辣鮮香,做法靠譜的做法
- 把黃豆芽摘去根,洗凈
- 青蒜劃開,切段
- 黃瓜刮成長(zhǎng)薄片
- 黃豆芽和青蒜下鍋加少許鹽猛火炒半分鐘斷生
- 把青菜墊在裝毛血旺的盆底
- 燒開水,鱔魚和鴨血焯水備用
- 燒熱油,下郫縣豆瓣炒出紅油
- 下火鍋底料,炒勻出紅油,加少許醬油

- 加入少許米酒和適量清水燒開,撈去調(diào)料雜碎,加適量鹽(可以自己根據(jù)口味嘗一下咸淡)
- 倒入鴨血、鱔魚、午餐肉
- 耐煮,煮一二分鐘
- 如果喜歡豆皮,而且是耐煮的,可以一起放進(jìn)去
- 加入黃喉、毛肚,下鍋后湯燒開約半分鐘即可
- 連湯倒入盆中,灑上蒜末備用
- 另起油鍋,先下干辣椒微火炒香,再下花椒,炒香即可
- 連同熱油一起潑入盆中
- 可以大快朵頤了!
