秒殺飯館味道的【黃燜雞米飯】的做法
- 雞腿洗凈,剁成4cm大小的塊。
- 生姜切片、干辣椒切成小圈。
- 香菇切片,青椒切成細長的馬蹄狀。
- 炒糖色:鍋里倒入底油,冷油時放入一勺白糖。
- 小火慢慢加熱,待油溫逐漸升高,白糖開始融化并變成較深的棕色(期間要不斷攪拌,防止糊鍋)。
- 迅速倒入雞塊,轉大火,快速翻炒!烹入兩勺料酒。
- 將生姜片和干辣椒倒入。
- 兩勺醬油。
- 炒勻。
- 倒入清水,以能淹住雞肉為準。

- 倒入香菇片。
- 一勺白胡椒粉。
- 一勺鹽。
- 翻炒均勻后,蓋上鍋蓋燜煮,轉中小火15——20分鐘。
- 待雞肉軟爛,湯汁濃稠后(湯汁不要收的太干),最后放入青椒。
- 少許味精,兜炒均勻后,關火!青椒基本斷生即可,不要炒時間久了!
- 大米淘洗干凈倒入電飯鍋中,加入超過大米一指肚的清水。
- 按下煮飯鍵,30分鐘后,香噴噴的米飯就做好了。
