今天做的是過年必備的硬菜，年年有余——糖醋鯉魚躍龍門。糖醋鯉魚要想擺盤姿勢堅(jiān)挺，躍龍門或者擺尾巴，必須做到兩點(diǎn)：1??淀粉糊不能太薄；2??魚在油鍋里定型后，炸制的干硬程度必須到位、徹底。

糖醋鯉魚躍龍門的做法

1. 一條殺好的鯉魚，大約1.8斤，不要選超過2斤，太大不好炸透

1. 頭下方各割一刀，拍一拍，即可輕松找到并抽去兩邊的魚腥線

1. 45度傾斜著向魚頭方向改花刀，一面7刀，另一面錯(cuò)開切6刀

1. 切口處放姜片蔥絲，肚子里也放一些，撒上料酒，腌制半小時(shí)

1. 土豆淀粉150克、面粉40克、啤酒150克，攪拌均勻

1. 攪拌完成后，淀粉糊是能流成一條線、拉出一條絲的稠糊

1. 把魚兩面和切口內(nèi)部，掛滿淀粉糊，準(zhǔn)備油炸

1. 油溫6成熱，潮濕的木筷子插進(jìn)去周邊冒白沫，開始炸魚

1. 木棍或者筷子挑著魚嘴，另一只手捏著魚尾，不要讓魚挨鍋底，先給兩面淀粉糊炸定型，再整個(gè)丟進(jìn)油鍋

1. 魚肚子始終朝上，整體圈成O型，不停地把熱油澆到魚肚子上油炸不到的地方

1. 中火炸定型，轉(zhuǎn)中小火炸干炸黃炸焦，再出鍋，不然在盤子里會軟趴趴

1. 炸好的鯉魚，放在盤子里，是尾巴朝上翹起來的

1. 蔥花、姜末、蒜末、陳醋、米醋、老抽、白糖、鹽，提前稱入碗里

1. 另起鍋，鍋里一點(diǎn)點(diǎn)底油

1. 下入碗里的料

1. 沸騰后小火煮5分鐘，激發(fā)香味

1. 下入水淀粉25克（什么是水淀粉？淀粉5克，用20克水化開）

1. 出鍋時(shí)候加10克明油（剛才炸魚的熟油），這樣表面更油亮

1. 均勻澆到魚身上
