慕斯液
芒果泥

淡奶油

芒果慕斯蛋糕的做法
- 主材料,這個配方是6寸的,家里剛好沒有6寸蛋糕模具,就用了3個4寸的
- 黃油隔水融化待用
- 奧利奧餅干去除夾心后用料理機最小孔刀片搖碎
- 餅干碎和融化好的黃油混合均勻
- 吉利丁片冷水泡軟(夏天用冰水或者冷水泡住放冰箱保鮮層)
- 模具底部用保鮮膜包一下或者用油紙墊一張,慕斯底給它壓實壓平整,放冰箱保鮮待用
- 芒果搖成泥(成品要細膩好看的話推薦用破壁機打效果更佳或者料理機搖完后過濾一遍)
- 取30克芒果泥留做鏡面
- 泡軟的吉利丁片10克擠干水份,放入220克芒果泥中,隔水加熱融化,邊加熱邊攪拌
- 像這樣吉利丁片融化即可
- 淡奶油加入細砂糖,低速打6成發即可
- 芒果泥和打好的奶油混合均勻倒在定型好的奧利奧慕斯底上面,放冰箱保鮮靜置一小時
- 芒果泥30克?純凈水30克,過濾一下,放泡軟的吉利丁片一起隔水融化
- 將鏡面倒在成型的慕斯層上
- 放冰箱保鮮4小時以上
- 脫模的時候選一個高的罐子放底下,然后用電吹風輕輕沿著模具周邊吹幾下即可輕松脫模(不要吹太久哦)
