最嫩,最下飯的麻婆豆腐的做法
- 先準備花椒面,將花椒和麻椒倒入鍋中炒香炒干,晾涼后用搟面杖搟成面。
- 過篩。嫌麻煩的可以買成品花椒面,但是肯定沒有現焙的香!
- 一勺豆瓣醬,一勺豆豉,剁碎備用,牛肉燉成末備用
- 蔥姜蒜切好備用
- 水燒開,內酯豆腐切大塊入水煮一下,水沸關火,避免煮碎,放在鍋中備用

- 另起鍋燒油,熱鍋涼油,倒入牛肉沫,煸干煸香!一定要煸干
- 煸干后盛出一半牛肉沫備用,剩下一半鍋中加入剁好的豆瓣醬和豆豉,小火炒出紅油,如果感覺要糊就直接加入蔥姜蒜
- 蔥姜蒜炒香后加入兩三勺的辣椒面,小火翻炒
- 辣椒面炒香后烹入10ml料酒,10ml生抽,加入200ml水開始調味
- 加入20ml老抽,一勺雞精,一勺白糖,一勺花椒面
- 將煮過的豆腐轉移到鍋內,小火燉10分鐘
- 燉的過程中不要翻拌,可以晃動一下鍋。等湯汁收的差不多了,準備水淀粉勾芡,準備3勺水淀粉,50ml水攪勻,分三次均勻的倒入鍋中,每次倒完了晃動一下鍋,隔10秒再倒!
- 盛出到盤中,將準備好的花椒面均勻的撒到豆腐上,
- 撒上盛出的牛肉沫和青蒜,完活!
