這是一道超簡單的下飯菜,回鍋顧名思義,將主要食材要進行一次煎制后再次回鍋跟別的配菜們一起炒制,調料湖南用黑豆豉多一些,四川用郫縣豆瓣醬多一些,一千個家庭有一千種不用的做法,我喜歡這兩種一起用,只要注意下比例,味道層次更加豐富
還可以做回鍋豆腐、回鍋土豆、回鍋杏鮑菇各種。。。~家中常備豆瓣醬,隨時來一盤餐桌上最受歡迎的小炒
用料
尖椒
兩個
1-2瓣
郫縣豆瓣醬
1大匙(15ml)
黑豆豉
1小匙(5ml)
回鍋藕片的做法
- 原料準備,蓮藕一大截,脆藕為佳。黑豆豉就是圖片這種黑色干豆豉,豆瓣醬我選擇了免剁的,每次剁起來案板好不利索偷個懶~如果你喜歡更辣一些可以加新鮮的紅朝天椒
- 蓮藕去皮切2-3毫米厚的半圓片,尖椒斜切絲,蒜剁碎。
- 鍋燒熱下油,將切好的藕片碼入鍋中,中火煎至一面微金黃,再煎另一面,煎的火候不夠或太干焦都會影響口感。一大截蓮藕大概要分3次煎完,每次適當往鍋中補充些油。煎好的蓮藕待用

- 利用鍋內余油,小火將蒜、豆豉、豆瓣醬炒香,如果沒余油了適當補充哈,這里一定要用小火,因為豆瓣醬很容易炒焦。
- 加入青椒一起炒至斷生,再加入煎好的蓮藕同炒兩分鐘至入味即可,因為豆豉和豆瓣醬的風味咸味都很足,無需其他調味啊。
