- 泡米:圓糯米放干凈的盆里,加兩倍水,放陰涼處泡發(fā)三天三夜,直到米有酸味和水面有發(fā)酵的泡沫
- 淘洗:把發(fā)酵后的水倒掉,用漏勺淘洗米數(shù)次,直到水清澈,聞不到酸味
- 煮粽葉:鮮粽葉洗干凈放鍋里,加水沒過粽葉,放一小勺鹽和堿,煮15分鐘后,撈出放涼水里泡一下,控水
- 蒸棗:大棗清洗干凈,蒸20分鐘
- 蒸米:粽葉去梗,放到籠屜墊底,鋪一層米一層棗,重復(fù)兩次(太厚蒸時(shí)長(zhǎng),不易熟),加入蜜棗和紅腰豆就是甑糕
- 鋪平整后,把粽葉蓋上,開中大火蒸
- 半小時(shí)后加一碗開水,用筷子戳幾個(gè)洞,攪拌下,使蒸氣上下通暢,防止米夾生
- 再過半小時(shí),二次加開水,戳洞,攪拌
- 蒸一個(gè)半小時(shí)后燜至三小時(shí),開蓋后米香棗香撲面而來,嘗一口,又甜糯又筋道
- 冷吃熱食都美味,懶人的大鍋粽
小貼士
1.圓糯米比長(zhǎng)糯米更有粘性,做涼糕餾米或包粽子更好吃
2.糯米泡發(fā)一定在無油無水干凈的盆中,期間不攪拌,清洗時(shí)也不用手,防止米碎掉
3.煮粽葉時(shí)加鹽殺菌,加堿保持粽葉翠綠,過涼水更有韌性不易開裂
4.蒸米時(shí)加兩三次開水(喜歡吃甜的可以加白糖水),會(huì)使米更軟糯
5.清洗大棗時(shí),水里可以加入少許面粉和食鹽,既能吸臟還能殺菌
6.家中有小孩的蒸棗后去核,在做餾米
